Seasonal Stevia Recipe, Fall-Winter, Stevia Pumpkin Loaf

Ingredients:

Pumpkin puree
1 cup
Stevia (¼ tsp. of Pure Stevia Extract or 2 ½ to 3 tbs. of Krisda Stevia Extract)
Sunflower oil   1/3 cup
Egg 1
Non fat yogurt ½ cup
Orange zest ¼ orange
Vanilla 1 tsp.
Whole spelt flour 1 cup
Spelt flour 1 cup
Baking soda ½ tsp.
Baking powder 1 tsp.
Ginger 1 tsp
Cinnamon 1 ½ tsp.
Nutmeg ½ tsp.
Cloves ¼ tsp.
Black pepper ¼ tsp.
Cardamom ¼ tsp.
* Dried cranberries ½ cup
Pumpkin seeds ¼ cup

How to Prepare:

  1. Pre heat oven to 350 degrees. Line the bottom of a 7 ½  x  3 ½ x 2 ½ inch loaf pan with parchment paper or oil and flour.
  2. Mix together the pumpkin puree, and stevia, set aside.
  3. Mix together the flour, baking soda, baking powder and spices.
  4. Beat the oil and egg together until creamy. Beat in the yogurt, vanilla and orange zest. Stir the pumpkin puree into the liquid.
  5. Fold the dry ingredients into the wet ingredients, stirring as little as possible. Mix in the dried cranberries and pumpkin seeds just before the flour is completely blended.
  6. Pour into the prepared loaf pan and bake for 45 minutes – 1 hour until nicely browned and firm to the touch. Allow to cool for 15 minutes before taking out of the pan.

* Be sure to use apple juice infused dried cranberries as most are sweetened with sugar.

Peanut Butter Fudgies

Ingredients:
1 Tsp Almond Extract (1/2 tsp more if desired)
8 oz Cream Cheese
3 tbs Butter
1 1/2 (to 2) Tbs Unsweetened Cocoa
1/3 C Chipped Pecans
1/2 C Crunchie P-Nut Butter
1/3 C Flour
12 or more Pkts of STEVIA (to taste)

How to Prepare:
Preheat oven to 385
Mix all ingredients well.
Form 'Fudgies' to desired shape and size on an ungreased cookie sheet.
Bake 8 mins (should be a tiny bit crunchy on the outside and yet creamier on the inside):D ENJOY!!

Artichoke Dip

Ingredients:
4 oz grated cheese, Asiago or Havarti work best
1/4 tsp stevia concentrate powder
3/4 cup mayonnaise
14 oz chopped artichoke hearts
3/4 cup chopped sun dried tomatoes
1 TBS lemon juice
1 TBS minced fresh garlic

How to Prepare:
Mix all ingredients thoroughly. Bake in a low dish or quiche dish for 20 minutes at 350.

Sauces & Jams

Blueberry Sauce

Ingredients:
1/2 tsp stevia concentrate powder
1/8 tsp salt
1 1/2 TBS cornstarch
1/2 cup water
2 cups blueberries
1 TBS lemon juice
1/2 TBS butter

How to Prepare:
Mix stevia, salt and cornstarch in a saucepan. Place on medium heat and add water, stir until thickens. Add blueberries, lemon juice and butter. Continue to stir as it thickens. Remove from heat, cool, serve over cheesecake base.

Chocolate Sauce

Ingredients:
2 oz unsweetened baking chocolate
1/2 tsp stevia concentrate powder
3/4 water
1 tsp vanilla
2 tsp arrowroot
1 TBS water

How to Prepare:
Dissolve stevia in water and then bring to a boil. Add chocolate and stir until melted. Remove from heat, add vanilla. In a separate bowl, combine 1 TBS water and arrowroot. Add to chocolate mixture and heat until thickened.

Blueberry Spice Jam

Ingredients:
2 1/2 pint blueberries
1 tbs lemon juice
1/2 tsp nutmeg or cinnamon
2 3/4 tsp stevia concentrate powder
3/4 cup water
1 3/4 oz powdered pectin

How to Prepare:
Thoroughly crush blueberries. Add remaining ingredients and bring to a boil while stirring. Boil fully for one minute, stirring constantly. Remove from heat and skim off foam. Put in sterile jars.

Pear Apple Jam

Ingredients:
2 cups peeled, cored and finely chopped pears
1 cup peeled, cored and finely chopped apples
3 1/4 tsp stevia concentrate powder
1/4 tsp cinnamon
1/3 cup lemon juice
6oz liquid pectin

How to Prepare:
Crush fruit in large saucepan and add cinnamon. Mix in stevia and lemon juice, bring to a boil over high heat while stirring. Immediately add pectin and return to a full boil, boil hard for one minute while stirring. Remove from heat and skim off foam. Place in sterile jars.

Elderberry Jam

Ingredients:
3 cups elderberry juice
1/4 cup lemon juice
2 1/4 tsp stevia concentrate powder
1 pkg. powdered pectin

How to Prepare:
Place all ingredients in a large pot. Boil fully for one minute, stirring constantly. Place in sterile jars.

Strawberry Jam

Ingredients:
1 pkg. no sugar pectin
2 teaspoons whole leaf stevia powder
1 cup cold water
5 cups sliced strawberries

How to Prepare:
Over medium - high heat, boil pectin, stevia and water in a saucepan. Boil for one minute, stirring well. Thoroughly stir in strawberries. Pour into sterile containers.

Herb Jelly
Wonderful with meat, poultry or as a spread on sandwiches.

Ingredients:
1 cup finely chopped fresh mint, sage, marjoram, tarragon or basil (leaves & stems from all may be used.)
1 cup boiling water
1 tablespoon lemon juice
1 1/2 tsp stevia concentrate powder
1/2 cup cider vinegar
3 oz liquid pectin
4 sprigs of herb of choice (optional)

How to Prepare:
Using a glass bowl, place fresh herb and boiling water, cover and let stand for 30 minutes. Strain with a cheesecloth and add enough water to make one cup, this is your herb infusion. Place infusion, lemon juice, stevia and vinegar in heavy saucepan. Boil over high heat adding pectin when boiling begins. Bring back to a full boil for one minute while stirring. Remove from heat and skim off foam. Place in sterile jars and add fresh herb sprigs if desired. Yeilds: 2 pints

Bread & Muffins

Apple Sauce Bread

Ingredients:
1 1/2 cups all purpose flour
1/4 cup wholewheat flour
1/2 cup bran
1 tsp baking soda
1/2 tsp salt
1/2 tsp stevia concentrate powder
1/2 cup shortening
1 egg, beaten
1 1/4 cups applesauce
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger

How to Prepare:
Add all dry ingredients together in one bowl. Cream in shortening. Add egg and applesauce in separate bowl and then fold into dry ingredients. Bake in a 5" X 9" greased loaf pan at 350 for 35-40 minutes.

Oatmeal Apple Muffins

Ingredients:
1C. whole wheat flour,
1C. rolled oats,
1/2 tsp salt,
3 tsp baking powder,
1/2 tsp nutmeg,
2 tsp cinnamon,
1 1/2 tsp Stevia
1 egg, 3/4C. milk,
1/4C. apple sauce,
1 med. apple cored and chopped
3/4 C. raisins (optional).

How to Prepare:
Mix first 7 ingredients thoroughly and mix remaining ingredients in seperate bowl. Gradually mix the dry ingredients into the moist ingredients. Spoon into greased muffin tins and bake 15-20 minutes in a 400 degree oven.

Banana Bread

Ingredients:
2 eggs
2/3 C. melted butter
1 C. mashed bananas
1/3 C. milk
1 tsp vanilla
2 1/2 C. wholewheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp stevia concentrate powder
1/2 C. chopped nuts

How to Prepare:
Combine eggs, butter, bananas, milk and vanilla. In another bowl combine remaining ingredients, then add banana mixture to it. Mix until moistened. Pour into greased 9X5 loaf pan and bake in a pre-heated oven of 350 for one hour.

Cookies

Biscuits

Ingredients:
3 cups wheat flour
1 cup flour
1 3/4 oz butter
2 eggs
1/2 tsp stevia concentrate powder
1 pkg yeast
1/2 c water, warmed
1/2 tsp vanilla

How to Prepare:
Dissolve yeast and stevia in warm water. Beat butter and eggs in separate bowl, then add flour, yeast mixture and vanilla. Let stand 40 minutes. Roll out and cut into small biscuits. Bake at 350 of 30 minutes.

Chocolate Chip Cookies

Ingredients:
1/2 cup cashew butter
1/4 cup oil
1/2 cup apple butter
1/3 tsp. powdered Stevia extract
1/2 tsp. Stevia concentrate
1 tsp. vanilla extract
1 cup whole wheat pastry flour
1/4 tsp. baking soda
1/4 tsp. salt
1/2 cup chocolate chips OR carob ships

How to Prepare:
Preheat oven to 375 degrees, grease a cookie sheet.
Cream the cashew butter and oil together in a mixing bowl. Add the apple butter, Stevia extract, Stevia concentrate, and vanilla extract.
Combine flour, baking soda, and salt together, add to wet ingredients. Stir in chocolate or carob ships.
Spoon onto cookie sheet and flatten with palm of hand.
Bake 12-15 minutes
Yield: About 16 cookies

Peanut Butter Cookies

Ingredients:
2 cups flour
1/2 tsp stevia concentrate powder
1/2 tsp baking soda
2 eggs
1/2 cup milk or water
1 1/2 cups peanut butter
6 TBS oil
2 TBS vanilla

How to Prepare:
Mix the dry ingredients in one bowl, mix moist ingredients in another bowl until smooth. Gradually add dry ingredients. Take a teaspoon of dough and roll into a ball, place on cookie sheet and place a whole peanut into the centre. Bake for 10 minutes at 350.

Spice Cookies

Ingredients
1 C. amaranth Flour
1/2 C. quinoa flour
1/2 C. millet flour
1/4 C. Jerusalem artichoke flour
2 T. Omega Nutrition Nutri-Flax
1/3 C. Water
1 T. lecithin granules
1/4 t. sea salt
2 t. baking powder
2 T. vanilla flavoring
1 1/2 t. stevia powder (or 4 T. + 1 1/2 t. stevia concentrate)
4 oz. Earth Balance (OR other expeller pressed oil spread OR butter OR 6 T. organic unrefined coconut oil)

How to Prepare:
1. Combine all dry ingredients and sift.
2. Mix the Nutri-flax and the water.
3. Soften the butter, and add the oil, lecithin, and flavorings to the butter.
4. Add the Nutri-Flax to this mixture.
5. Add the dry ingredients to the wet ingredients, and mix until it comes together.
6. Drop by teaspoonfuls onto greased cookie sheet and then flatten. (This dough can be rolled out 1/4" thick in amaranth flour and cut into interesting shapes.)
7. Bake in 350 degree oven for 12mins.

Variation: One cup soaked and sprouted almonds, ground in food processor and 2 medium, grated carrots or 2 medium, grated zucchini added to the basic recipe greatly improves the flavor.

Cookie Balls

Ingredients:
2C rolled oats
1 large apple (finely diced)
3/4 C raisins
1C nut butter
1/4lb whole pecans
1/2 stick butter
1/2C carob chips (optional)
2 eggs
1C water
1/2 tsp Stevia powder concentrate.

How to Prepare:
Combine rolled oats, eggs, water and butter. Stir in nut butter and then other ingredients except pecans. Form into balls and place on greased cookie sheet. Place a pecan on top of each ball. Bake at 350 degrees for 10-12 minutes.

Apple Bran Cookies

Ingredients:
11/2 C. apple sauce
2 eggs
1 tsp vanilla
1 tsp cinnamon
1 tsp salt
1/2 tsp all spice
1 tsp baking soda
1/2 tsp stevia
3 C. rolled oats
1 C. all bran cereal
1/3 C. whole wheat flour
1/2 C. nuts
1 C. raisins (optional)

How to Prepare:
Thoroughly blend vanilla, cinnamon, salt, all spice, baking soda, stevia, eggs and apple sauce. Mix in rolled oats, cereal, flour, nuts and raisins. Spoon approximately one tablespoon onto greased baking sheet, flatten only slightly. Bake for 12 minutes in a pre-heated oven of 350.

Cakes & Pies

Flourless Chocolate Cake

Ingredients:
14 oz semi-sweet chopped chocolate
3/4 C. plus 2 TBS of unsalted butter
10 egg yolks
1 tsp stevia
1 TBS vanilla,
1 tsp lemon juice,
10 egg whites,
1/2 tsp stevia,
2 C. heavy cream whipped

How to Prepare:
Melt chocolate and butter in double boiler or in microwave. Allow to slightly cool. Beat yolks and 1 tsp stevia until smooth, stir in vanilla and lemon juice then blend in chocolate mixture. Blend egg whites in large mixer bowl until peaks are formed. Gradually add 1/2 tsp stevia, beat until stiff peaks form. Stir 1 C. whites into chocolate mixture and then fold in remaining whites. Pour into 10-12" pan, greased, floured, wax paper lined. Bake at 250 for 2 1/2 hours, allow to completely cool before serving.

Blueberry Cheesecake

Ingredients:
1pkg unflavoured gelatin
1 cup boiling water
16oz cream cheese (room temperature)
1 tsp vanilla
1/2 tsp stevia concentrate powder

Topping:
1/2 tsp stevia concentrate powder
1/8 tsp salt
1 1/2 TBS cornstarch
1/2 cup water
2 cups blueberries
1 TBS lemon juice
1/2 TBS butter

How to Prepare:
Dissolve gelatin in boiling water, add cream cheese and vanilla. Beat well. Add stevia and continue to beat. Place into dessert dish or cake pan. Cool for one hour in the refrigerator.

Topping: Mix stevia, salt and cornstarch in a saucepan. Place on medium heat and add water, stir until thickens. Add blueberries, lemon juice and butter. Continue to stir as it thickens. Remove from heat, cool, serve over cheesecake base.

Apple Cobbler

Ingredients:
4 large apples, peeled, cored and sliced
1 cup flour
2 tsp cinnamon
3 tsp baking powder
1.2 tsp stevia concentrate powder
1 egg beaten
1/3 cup melted butter

How to Prepare:
Mix dry ingredients, add beaten egg. Stir until crumbly. Place apples in greased 10" pie or cake pan. Spoon mixture over apples. Bake 350 for 45 minutes until apples are tender.

Carrot Cake

Ingredients:
2 cups whole wheat flour
1 TBS baking powder
1/2 tsp salt
1/2 tsp stevia concentrate powder
1/4 cup chopped walnuts
2 eggs
1/4 cup oil
1 1/2 cups grated carrots
1/2 cup zucchini
1/2 cup half and half
1 cup plain yogurt
1 TBS pumpkin spice

How to Prepare:
Cream all moist ingredients together except eggs. Add stevia and mix well. Add eggs mixing well. Then add the remaining ingredients and stir. Place in a greased cake pan and bake at 350 for 35-40 minutes.

Fruit Shortcake

Ingredients:
6 cups sliced fruit ie: strawberries or raspberries
1 tsp stevia concentrate powder
2 cups flour
2 tsp baking powder
1/2 cup butter
1 beaten egg
2/3 cup milk
whipped cream

How to Prepare:
Blend fruit and 1/2 tsp stevia. In a separate bowl combine dry ingredients including other 1/2 tsp of stevia, cut in butter, then add egg and milk. Stir until moist. Pour into greased 8" round cake pan. Bake at 450 for 18 minutes. Cool and then divide into two layers. Spread fruit mixture in centre and on top. Cover with whipped cream.

Apple Pie

Ingredients:
6 cups sliced apples
1/2 tsp stevia concentrate powder
1/2 cup arrowroot flour
1 tsp cinnamon
1/2 tso nutmeg
1/2 tsp ginger
1 TBS butter

How to Prepare:
Pastry for double crust pie
Combine stevia, arrowroot flour and spices, add to apples and mix well. Place in bottom pastry shell, dab with butter. Place covering pastry on top and vent. Bake at 400 for 10 minutes then reduce to 350. Bake until centre filling is bubbling.

Orange Cake

Ingredients:
grated peel of 2 oranges
1 cup pure orange juice
1/2 tsp stevia concentrate powder
2 eggs
3 TBS oil
dash of salt
2 cups flour (try rye, barley or rice combination)
4 tsp baking powder

How to Prepare:
Combine all moist ingredients and then add in dry ingredients. Bake at 350 for one hour.

Chocolate Cheesecake

Ingredients:
1 pkg gelatin
1 cup boiling water
16oz cream cheese, softened & cut into pieces
1oz unsweetened baking chocolate, melted
3/4 tsp vanilla
16 drops Stevia

How to Prepare:
Stirring well, dissolve gelatin in the boiling water. Place into dissolved gelatin: cream cheese and melted chocolate. Mix together. Add the vanilla and stevia, mix well on high for at least 2 minutes.
Pour into buttered pie pan. Chill 3 hours until firm.

Chocolate Cake

Ingredients:
3/4 cup margarine
1/4 tsp stevia powder
2 1/2 tsp egg replacer
2 tsp vanilla
2 cups cake flour
2 tsp baking powder
1/3 cup instant dry milk
1/3 cup cocoa
1/4 cup boiling water
1 cup water, room temperature

How to Prepare:
Cream margarine and stevia. Add egg substitute and vanilla, mix for 1 minute. In a separate bowl, dissolve cocoa in boiling water. Add flour, baking powder, dry milk and cocoa mixture to batter. Slowly ad in room temperature water and beat until smooth. Pour into 9" greased square pan, bake at 350 for 35 minutes. Place on wire rack to cool.

Pudding

Quick Chocolate Pudding

Ingredients:
1/2 cup heavy cream
3 TBS water
1 tsp cocoa powder
1-2 drops of liquid stevia
1 scoop of protein powder

How to Prepare:
In a blender, add cream, water, cocoa and stevia. Add protein powder and blend well. Adjust protein powder needed to gain achieve consistency.

Low Cal Chocolate Pudding

Ingredients:
1 cup low fat cottage cheese
1 brick low fat, extra firm tofu
4 cups water (enough to fill your blender)
1 box instant sugar free chocolate pudding
1 1/2 TBS of cocoa powder (no fat cocoa if possible)
2 drops liquid stevia

How to Prepare:
Blend cottage cheese, tofu and water. Add pudding mix, cocoa, stevia and blend again. Place in fridge until firm.

Chocolate Mousse

Ingredients:
1 - 2 med. sweet potatoes cooked soft and peeled
3/4 cup unsweetened cocoa
1 cup heavy whipped cream
1 1/2 tsp of vanilla extract
1 tsp stevia liquid

How to Prepare:
Add all ingredients and blend until smooth. Adjust cocoa, stevia and/or vanilla to suit taste. Add walnuts, almonds or carob chips for a variation.

Carob Chocolate Pudding

Ingredients:
1/3 cup flour
1/2 cup cocoa
1/2 cup carob
1/2 tsp stevia concentrate powder
1/4 tsp salt
1 3/4 cups skim milk
1 oz unsweetened chocolate
1 TBS butter

How to Prepare:
In a saucepan, combine flour, cocoa, carob, stevia and salt. Gradually add milk and whisk until smooth. Place over medium heat and stir constantly. Once hot, add chocolate and butter, stir until well blended and thick. Pour into container(s) and chill.

Soda

Ginger ale

Ingredients:
3 1/2 cups water
3/4 cup peeled and chopped ginger root
2 TBS vanilla
1 TBS lemon extract
1/4 tsp stevia concentrate powder
Carbonated or sparkling water

How to Prepare:
Rapidly boil ginger root in water for 10 minutes. Strain and place liquid in a jar. Stir in vanilla, lemon and stevia. Cool and store in the refrigerator.

Root Beer

Ingredients:
3 TBS sarsaparilla root
1 TBS licorice root
1 quart water
1/2 tsp stevia concentrate powder
2 quarts carbonated water

How to Prepare:
Simmer sarsaparilla and licorice root in the quart of water for 45 minutes, do not boil. Add stevia in the last 10 minutes. Strain and return the liquid to the stove, simmer until reduced to half the quantity. Remove from heat, strain in cheesecloth and chill. Combine 10-12 oz carbonated water to 2 oz of rootbeer concentrate. Add more stevia if required.

Ice Cream

Raspberry Sherbet

Ingredients:
2 cups plain yogurt
1/4 cup milk
1/2 cup unsweetened raspberry juice blend concentrate (thawed)
1 tbsp. orange juice concentrate or blend (thawed)
1 tsp. vanilla extract
3/4 tsp. powdered Stevia extract
1 banana (optional)

How to Prepare:
Blend all ingredients together in a blender until smooth.
Pour into the container of the ice cream machine and process according to directions.
NOTE: It works very well to substitute the yogurt for a 12 ounce package of silken tofu. Add a total of 1 cup milk.
May use any fruit juice blend concentrate of your choice.

Fruit Sherbet
(ice cream machine required)

Ingredients:
2 cups plain yogurt
1/4 cup milk
1/2 cup unsweetened juice concentrate
1 TBS orange juice concentrate
1 tsp vanilla
1/2 tsp stevia concentrate powder

How to Prepare:
Blend all ingredients until smooth. Place in machine and follow usual instructions.

Lemon Ice Cream

Ingredients:
1/2 tsp stevia concentrate powder
1 cup milk
1 cup whipped cream
1/4 cup lemon juice
1/2 tsp lemon concentrate

How to Prepare:
Mix stevia, milk and cream. Stir until mixed thoroughly and stevia is dissolved. Cover with stretch wrap and freeze for 1 1/2 hours. Add juice and extract. Beat thoroughly, cover and return to freezer. Wait 2 hours and then beat again. Remove and whip 1/2 hour before serving.

Vanilla Ice Cream

Ingredients:
1/2 tsp stevia concentrate powder
1 cup milk
dash of salt
1 cup half and half
2 cups whipped cream
1 1/2 tsp vanilla

How to Prepare:
While stirring, scald milk. Dissolve stevia in milk, remove from heat, add remaining ingredients. Cover and place in fridge until cooled then freeze.
